Eat Sweet Fridays: Lemon Squares

We are starting a new series over here at Live Sweet called Eat Sweet Fridays! I’m super excited about this one as I love sweets and trying new recipes and sharing it all with you! This is seriously like the perfect series for me and  I was so excited when I thought of it the other day! What a perfect combination Sweets and Fridays, a great start to the weekend right!?! So now every Friday you can come here for a fun new and usually pretty or cute recipe! Sometimes I will make the recipe and get to share with you first hand how fabulous it is and other times I will share with you something I found online and loved and knew I must pass it along to you because obviously you would love it too! I am hoping that this will encourage me to broaden my baking horizons a bit and try lots of new recipes to show off here. I tend to find things I like and then stick with them which can be good but I know I also need to keeping trying new things to continue to add to my favorites.

This recipe is one that was passed down from my Grandma Bonnice. My Grandma Bonnice was a wonderful cook and got such joy out of preparing meals and sweets for all of her family, I do not get my cooking skills from her because lets face it I have none, but I do love to bake and share my tasty treats with all of my family and friends so I like to think that came from her!  She always had something delicious waiting for her grandchildren every time we arrived for a visit and now I love preparing special sweets whenever I know someone will be stopping by, there is something that makes my heart so happy when someone I love enjoys one of my tasty treats!

These are so easy to make, take very few ingredients and make for a pretty plate of sweets! I always think of them as a spring treat and tend to make them most around this time of year but they of course are always tasty if you need something quick to prepare. I think they would be perfect for Easter brunch, maybe I will have to make them again for my family then!

Lemon Squares

1C butter melted

2C flour

1/2C powdered sugar

4 eggs

2C sugar

6 Tablespoons lemon juice

1/2 teaspoon baking powder

Mix first 3 ingredients well and press in a 9×13 well greased pan. Bake at 350 degrees for 22 minutes.

Beat eggs lightly with fork, add sugar, lemon, and baking powder. Pour mixture over shell and bake for 22 minutes at 350 degrees.

When done remove from oven and add powder sugar on top.
