Granola Balls Recipe

I promised some healthy snacking ideas and I’m excited to share one of my favorites here with you. I have tried lots of different versions of this recipe and although I always enjoyed them there were a few things I wanted to change and tweak about the recipe so I decided to come up with my own version. These are so easy to make and since they don’t require any melting or baking they are a great one to have your little ones help out with!

They are a wonderful alternative to your store bought granola bars and make a delicious and filling snack. I am often getting a bit hungry an hour or so before lunch or dinner and tend to pick up some form of chocolate to fill that instant gratification. Now I can have a little chocolate and not feel so guilty and get some healthy nutrients at the same time. They taste very dessertish so you can probably tell the kids they are a treat and get away with it.

Makes about 3 dozen

Ingredients:

2 Cup Old Fashion Oats

1 Cup Unsweetened  Shredded Coconut

1/2 Cup Flaxseed Meal

1 1/4 Cup Peanut Butter

1/2 Cup Honey

3 Teaspoons Vanilla

1/4 Cup Dried Blueberries

1/2 Cup Mini Chocolate Chips

Mix the above ingredients together well and then use your hands to form the dough into balls. You can, of course, leave out the chocolate chips if you want them to be even healthier and you can switch out the blueberries for raisins or craisins if that’s more your taste. I store mine in the refrigerator as I think they taste best cold and they last forever this way.

After I made our batch of Granola Balls today I was looking at them thinking how although they are delicious they are pretty boring looking so I was wondering how I could dress them up a bit to share with you here and for the future if we ever want to serve them at a party or play date and have them look more appealing. So to the cupcake liner container, I headed and found that they fit perfectly into mini cupcake liners. Now they are a healthy and cute snack!
